New Year’s Resolution Salad Recipe

We had Chef Brandon McGuire in our KSWT News 13 studio and he was kind enough to show us a great recipe for a tasty salad that will help you keep your New Year's Resolution to eat healthy. 

 

Ingredients:

  • Chicken breast or tenders (cook to 165 F and use to your liking)
  • 3oz spinach
  • 3oz spring mix with arugula
  • 1oz honey roasted sliced almonds
  • 1oz gold raisins 
  • 1/2 sliced kiwi
  • 1oz goat cheese(you can adjust the recipe to your liking)

 

Blueberry Vinaigrette Ingredients:

  • 16 oz puree blueberries
  • 8oz of agave 
  • Tbl spoon of dejon mustard
  • 4oz of red wine vinegar
  • 4oz of olive oil(recipe can adjust to your liking)

 


1) Pan fry chicken with olive oil on med-high heat to 165, set aside and let cool.

2) Whisk blueberry vinaigrette ingredients in a large bowl until nice and smooth texture and season to taste.

3) When cooled chop the chicken into cubes or slices or to your preference.

4) In a separate bowl place your greens, blueberry vinaigrette and chicken inside and mix with your hand until greens are fully covered in the dressing.

5) Place mixture in a serving bowl and throw in the remaining ingredients and enjoy : )
