South west Salmon salad sandwich and potato salad

Chef Brandon McGuire was in the KSWT News 13 Studio and whipped up a great South West Salmon Salad Sandwich and some great potato salad. Click the link to get the recipe.

South West Salmon salad sandwich: 

 

  • 2lbs salmon filet
  • 1/2 chopped red onion
  • 12oz black beans (fresh or canned)
  • 4oz olive oil
  • 4oz chipotle peppers (fresh or canned)
  • 2oz chopped cilantro
  • 1oz lemon or lime juice
  • 1tsp minced garlic
  • 1tsp tapatio
  • salt & pepper to taste

 

sliced tomato, sliced green bell pepper, red romaine lettuce on sourdough bread. Bake salmon at 375 for 20 min. Let cool and place in a large bowl and mush together by hand (should have canned tuna like consistency)

Add the rest of the ingredients (except tomato and green bell pepper and lettuce) and mix well with a wooden or plastic spoon not by hand you do not want to mash the black beans.

Place lettuce on slice of bread and then salmon salad on the lettuce. Place sliced tomato and green bell pepper on top of the salmon salad and then the other slice of bread, serve whole or cut in half.

Potato Salad:

  • 2lbs gold potatoes
  • 1 cup chopped green onions
  • 1tsp chopped fresh basil
  • 1tsp chopped fresh thyme
  • 3oz olive oil
  • 3oz apple cider vinegar
  • salt and pepper

Boil potatoes until fork tender but not too soft so that they don't break apart upon tossing. Set potatoes aside and let cool.

1 cup chopped green onions in a large bowl put in all other ingredients. When potatoes are cool peel and cut into rounds about 1/4 inch thick like scalloped 1tsp chopped fresh basil potatoes and put into the bowl with the other ingredients and toss until completely mixed together. Season to taste with salt and 1tsp chopped fresh thyme pepper and serve.
