Healthy Taco Salad

Ingredients:

  • Ground turkey
  • spicy turkey sausage
  • wheat tortillas
  • spinach
  • arugula
  • fresh pico
  • green bell peppers
  • sweet peppers (all colors)
  • avocado
  • queso fresco
  • feta cheese
  • fontina cheese
  • olive oil
  • grill mates 5 pepper blend
  • salt and pepper
  • lemon juice
  • ceyenne pepper
  • chili powder

1) Cook turkey (1lb ground, 1lb spicy sausage) to 165 degrees set aside let cool.

2) dice one green bell pepper cook for 3 min and add to turkey, set aside let cool.

3) Bake tortilla shells in molding pan for 12 min at 405 degrees.

4) add spinach arugala mix into a large bowl (about 16oz of each)

5) slice sweet peppers ( about 8-10) and add with greens then toss together.

6) puree 4 avocados with 2oz lemon juice, 4oz olive oil, 4oz water, salt, pepper, tsp of cayenne, tsp of chili powder, 1oz of the grill mates 5 pepper blend and add to mix greens but add to your desire it makes a lot.


Fresh pico-

1) 1 red onion 4 tomatoes small diced, tsp minced garlic, tblsp of olive oil, salt and pepper to desire, 1/2 cup chopped cilantro, 1oz lemon juice, and 1oz of chopped fresh basil

2) mix all ingredients until well combined.
